Poor Man’s Lobster
Ingredients:
2 pounds of tautog fillets
1 cup sugar
½ lemon
Directions:
1. In a stock pot add 8 cups of water, 1 cup sugar and half a lemon. Bring to a boil.
2. Rinse fillets in cold water, pat dry with a paper towel and cut the fillets into about 1–2-inch chucks.
3. Drop the chucks into the boiling water. Do not stir. The fish will sink to the bottom of the pot and when the fish floats back to the top it’s done. Pick out floating pieces and place on paper towel.
4. Serve with melted butter for dipping or on a buttered roll.
